Fried Catfish - cooking recipe

Ingredients
    1/2 c. cornmeal (I use Seafood Breader)
    2 Tbsp. self-rising flour
    1 tsp. salt
    1/4 tsp. paprika
    1 lb. catfish, cleaned and dressed
    1/2 c. hot oil
Preparation
    Combine cornmeal, flour, salt and paprika.
    Dry fish thoroughly.
    Coat both sides of fish with mixture.
    Fry fish in hot oil over low heat, about 4 minutes on each side or until golden brown.
    Drain on paper towels.
    Yields 2 servings.
