Sweet Potato Banana Custards - cooking recipe

Ingredients
    2 c. mashed cooked sweet potatoes
    2/3 c. mashed ripe bananas
    12 oz. can evaporated milk (skim)
    1/4 c. packed brown sugar
    2 eggs, beaten
    1/2 tsp. salt
    1/2 c. raisins
    1 Tbsp. sugar
    1/2 tsp. ground cinnamon
Preparation
    In a large mixing bowl, combine sweet potatoes and bananas. Add milk; mix well.
    Stir in brown sugar, eggs and salt until well blended.
    Spray eight 1/2-inch ramekins, souffle dishes or 6 ounce custard cups with nonstick spray coating.
    Divide mixture evenly among the ramekins or cups.
    Sprinkle raisins in each cup. Arrange ramekins or cups on a baking sheet.
    Combine sugar and cinnamon; sprinkle on top of each.
    Bake in a 325\u00b0 oven for about 35 minutes or until a knife inserted comes out clean.
    Serve warm.
    Makes 8 servings.
