Beef Barley Soup - cooking recipe
Ingredients

2/3 c. pearl barley
1 medium onion, chopped
4 carrots, diced
2 c. water
1 (28 oz.) can tomatoes
1 bay leaf
salt and pepper to taste
1 1/2 lb. ground beef (turkey may be substituted)
1 clove garlic, minced
3 ribs celery, diced
3 (10 1/2 oz.) cans beef consomme
1 (10 1/2 oz.) can tomato soup
1/4 c. minced parsley
Preparation

Brown ground beef or ground turkey, onion and garlic in Dutch oven until meat is no longer pink.
Add barley and remaining ingredients.
Cover and cook simmering 1 1/2 to 2 hours.
Serves 6 to 8.
