Batter Fried Chicken - cooking recipe

Ingredients
    1 (2 1/2 lb.) broiler-fryer chicken
    1 c. pancake mix
    3/4 c. water
    cooking oil
Preparation
    In a covered saucepan, simmer chicken in salted water, enough water to cover for 20 minutes; drain.
    In a bowl, combine pancake mix and salt; stir in water.
    Beat for 2 minutes.
    Dip chicken in batter.
    Let excess batter drain off into bowl.
    In heavy skillet, deep fry a few pieces of chicken at a time until golden brown.
