Corn Fritters - cooking recipe
Ingredients

1 egg
1/4 c. milk
vegetable oil
1 (12 oz.) can whole kernel corn, drained
1 c. pancake mix
Preparation

Put 1-inch vegetable oil in skillet.
Blend egg and milk.
Add pancake mix, stirring just until smooth.
Fold in corn.
To ensure lightness, do not beat.
Drop by teaspoonfuls in hot oil at 325\u00b0. Cook slowly until golden brown, about 4 minutes.
Serve as a vegetable or with syrup, if desired.
Makes approximately 24 fritters.
