Salmon Blush(Low-Fat) - cooking recipe

Ingredients
    1 lb. salmon filets
    2 Tbsp. olive oil
    1 Tbsp. butter
    1 tsp. garlic, chopped
    2 Tbsp. capers
    1/4 c. white wine
    1/4 c. heavy cream
    1 Tbsp. fresh parsley
    salt and pepper to taste
Preparation
    In a large saute pan over medium-high heat, add butter and olive oil.
    Once butter and oil are heated, add salmon.
    Saute for 8 minutes, turning salmon over every 2 minutes. Next add garlic, capers, wine and cream. Bring to a simmer and let simmer for 4 minutes.
    Add parsley, salt and pepper. Serve.
    Yield: 4 servings, 4 ounces each.
