Apple Raisin Bran Muffins - cooking recipe

Ingredients
    1 1/2 c. Shredded Wheat
    1 c. skim milk
    1/4 c. margarine, melted
    1/2 c. honey
    1 large cooking apple, peeled, cored and grated
    3/4 c. raisins
    1 large egg, well beaten
    1 tsp. cinnamon
    1 1/4 c. all-purpose flour
    2 tsp. baking powder
    1/2 tsp. baking soda
Preparation
    Heat oven to 400\u00b0.
    Lightly grease 12 muffin cups.
    In a large bowl, soak cereal in milk for 5 minutes.
    Stir in margarine, honey, apple, raisins, egg and cinnamon.
    In another bowl, combine remaining ingredients.
    With a rubber spatula, fold flour into bran mixture just enough to moisten.
    Do not overmix.
    Evenly distribute among muffin cups.
    Bake 20 minutes or until done.
