Gurkensalat(Cucumber Salad) - cooking recipe

Ingredients
    1 large cucumber
    1/2 tsp. salt
    1 Tbsp. sugar
    1 tbsp. cider vinegar
    1 Tbsp. minced parsley
    1/4 c. sour cream (optional)
Preparation
    Peel the cucumber so that a little of the green rind remains. Slice paper-thin.
    Sprinkle slices with salt, sugar and vinegar. Serve this way, topped with minced parsley; or marinate in salt and sugar 15 minutes.
    Drain off liquid that has accumulated. Toss with sour cream, then sprinkle with parsley.
    Makes 4 servings as a relish.
