Pineapple Date Nut Loaf - cooking recipe

Ingredients
    1/4 c. butter
    1/2 c. sugar
    1 egg
    1/4 tsp. lemon extract
    1 (8 1/2 oz.) can crushed pineapple
    1/4 c. chopped nuts
    2 1/2 c. sifted all-purpose flour
    2 1/2 tsp. baking powder
    1/4 tsp. baking soda
    1 tsp. salt
    1/2 c. finely chopped pitted dates
    1/4 c. water
    1/4 c. chopped maraschino cherries, well drained
Preparation
    Cream butter and sugar.
    Add egg and lemon extract.
    Drain pineapple, reserving liquid.
    Add crushed pineapple and nuts to creamed mixture.
    Sift dry ingredients together.
    Add dates and mix well, separating date pieces.
    Stir dry ingredients into creamed mixture, alternating with reserved pineapple juice plus 1/4 cup water.
    Fold in cherries.
    Bake at 375\u00b0 about 55 minutes.
