Collard Greens Stem Relish - cooking recipe

Ingredients
    4 c. green stems
    1 c. okra
    3 stalks celery
    1/2 pod hot pepper
    1 c. onions (white or yellow)
    1 bell pepper (red)
    5 c. vinegar
    1/2 c. Creole seasoning or Accent
Preparation
    Wash the vegetables and
    cut into fine pieces; put into pot and cover with lid.
    Cook until tender (about 45 minutes). Sterilize jars and fill jars with vegetables approximately 3/4 full from top.
    Seal jars
    as
    directed
    with
    canning jar instructions.
    Store in refrigerator.
    Relish
    may\tbe
    used
    in potato salad, tuna salad,
    macaroni salad, toss salad, greens, cabbage, hamburgers, wieners, etc.
