Baked Ziti With Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 medium green and red bell pepper, diced
    1/4 lb. mushrooms, chopped
    1 (16 oz.) can tomatoes
    1 (8 oz.) can tomato sauce
    1/4 c. dry red wine
    1 tsp. basil
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. oregano
    1 pkg. frozen spinach
    1/2 c. frozen corn
    8 oz. ziti, cooked
    8 oz. Ricotta
    1/4 c. Parmesan
Preparation
    Saute peppers in oil for 5 minutes.
    Remove and set aside. Saute onions, garlic and mushrooms for several minutes.
    Break up tomatoes and add to skillet; add tomato sauce, wine, basil, salt, pepper and oregano.
    Bring to boil.
    Simmer 20 minutes.
    Add spinach and corn; cook until spinach wilts.
    Combine ziti, tomato mixture, Ricotta and 2/3 of peppers and spoon into prepared casserole.
    Sprinkle with Parmesan.
    Bake at 375\u00b0 for 25 minutes. Garnish with remaining peppers.
