Creamy Spinach And Carrot Soup - cooking recipe
Ingredients

3 Tbsp. butter or margarine
1 c. (2 medium) chopped onions
2 Tbsp. all-purpose flour
1 c. half and half
1 (10 3/4 oz.) can chicken broth
1 c. shredded carrots
1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
1/4 tsp. salt
1/4 tsp. pepper
pinch of nutmeg
zest or strip of orange peel
Preparation

In 2-quart saucepan, melt butter.
Add onions.
Cook over medium heat, stirring occasionally, until onions are tender (5 to 6 minutes). Stir in flour until smooth and bubbly (1 minute). Stir in half and half and chicken broth. Add remaining ingredients except orange peel. Continue cooking over low heat, stirring occasionally, until soup is heated through (12 to 15 minutes). Garnish with zest or strip of orange peel.
Serves 4.
