Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 1/4 c. sugar
3 tsp. vanilla
1 c. vegetable oil
2 c. unpeeled, grated zucchini
3 c. flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
4 tsp. ground cinnamon
1 c. chopped peanuts or walnuts
Preparation

Beat eggs until fluffy.
Beat in sugar, vanilla and oil.
Stir in zucchini.
Sift flour, baking powder, baking soda, salt and cinnamon.
Add to zucchini mixture, blending well.
Stir in nuts. Pour into 2 greased and floured 9 x 5-inch loaf pans.
Bake in preheated oven at 350\u00b0 for 45 to 60 minutes or until done.
Makes 2 loaves.
