Zucchini Pineapple Bread - cooking recipe
Ingredients

3 eggs
1 c. salad oil
2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
1 c. crushed pineapple, drained
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. nuts, chopped
1 c. raisins
Preparation

Beat eggs, oil, sugar and vanilla until thick and foamy.
Add zucchini and pineapple.
Combine remaining ingredients and stir into first mixture, just until blended.
Pour into greased and floured loaf pans.
Bake at 350\u00b0 for 1 hour or until pick inserted in center comes out clean.
Yields 2 loaves.
