Minestrone - cooking recipe
Ingredients

1 1/2 qt water OR veggie broth
2 medium potatoes
Pinch of oregano and parsley
3 small zucchini
5-6 tomatoes, OR 1 14.5 oz can tomatoes
2-3 Tbsp olive oil
3 carrots
1 small onion
1/2 c cooked kidney beans
Handful broken spaghetti
1 tsp basil
Preparation

Peel and cube potatoes.
Scrape and thickly slice carrots. Slice zucchini.
If using fresh tomatoes, peel and chop, or chop canned tomatoes.
