Salmon Souffle - cooking recipe

Ingredients
    1 can salmon, drained and picked over
    2 Tbsp. butter
    2 Tbsp. flour
    1 pt. milk or a little more
    1 c. bread crumbs
    3 egg yolks, well beaten
    salt and pepper to taste
    3 egg whites, beaten stiff
Preparation
    Melt butter and mix with flour in saucepan.
    Add milk, bread crumbs and egg yolks.
    Thicken like custard and add to flaked salmon.
    Pour into buttered pudding dish and fold in whites of eggs, beaten stiff.
    Bake 45 minutes in moderate oven.
