Ratatouille - cooking recipe

Ingredients
    2 medium size green peppers
    3 medium zucchini
    1 medium eggplant (about 1 lb.)
    1/2 c. salad or olive oil
    1 c. thinly sliced onion
    2 cloves garlic, crushed
    1 1/2 tsp. salt
    1/4 tsp. pepper
    3 medium tomatoes, peeled and cut in wedges
    2 Tbsp. chopped parsley
Preparation
    Wash peppers and halve.
    Remove ribs and seeds.
    Cut lengthwise into 1/4-inch thick slices.
    Scrub zucchini and cut crosswise into 1/2-inch thick slices. Wash eggplant.
    Cut lengthwise into quarters, then into 1/4-inch slices.
