Apple Butter - cooking recipe
Ingredients

6 lb. tart apples
2 qt. apple juice
sugar
cinnamon to taste (approximately 1 Tbsp. plus)
Preparation

Quarter apples (stems, seeds, peelings and all) in deep pot. Add apple juice to cover. Cook until soft and run through sieve. Measure and add sugar 4 to 1 (4 cups apples to 1 cup sugar).
Add cinnamon and cook slowly until apple butter.
