Broccoli Soup - cooking recipe
Ingredients

4 slices bacon, cut in small pieces
1 medium size onion, chopped
3 c. chopped fresh or thawed frozen broccoli
2 c. chicken broth
1 (4 oz.) can mushroom pieces, drained
1/4 tsp. salt
1/8 tsp. pepper
1 Tbsp. cornstarch
2 c. half and half or milk
Preparation

Cook bacon in a heavy saucepan until browned.
Remove with a slotted spoon.
Drain on paper towels.
Pour off all but 2 tablespoons of pan drippings.
Add onion.
Cook over medium heat until tender.
Add bacon, broccoli, broth, mushrooms, salt and pepper.
Bring to a boil.
Reduce heat.
Cover and simmer for 5 minutes or until broccoli is tender.
Meanwhile, stir cornstarch into a few tablespoons of half and half until blended.
Stir in remaining cream.
Reduce heat to low.
Gradually stir cream mixture into soup.
Stir until mixture boils and thickens, about 10 minutes.
Makes 4 servings.
