Swiss Steak - cooking recipe

Ingredients
    2 lb. round steak, 2 inches thick
    2 Tbsp. bacon fat
    flour to coat
    salt and pepper to taste
    2 onions, sliced
    4 carrots, diced
    1 can tomato soup
    3 to 4 potatoes, sliced
Preparation
    Season steak with salt and pepper; pound flour into steak. Sear meat in hot fat; place in roaster, pour soup over meat and simmer 1 hour.
    Cover meat with remaining vegetables.
    Cover and cook another hour.
    Remove meat and vegetables, add flour and make gravy.
