Raita Salad(India) - cooking recipe

Ingredients
    2 large cucumbers
    1 pt. plain low-fat yogurt
    2 Tbsp. chopped fresh mint
    dash of ground white pepper
    6 large, ripe tomatoes, thickly sliced (for serving)
Preparation
    Peel, halve and seed the cucumbers; grate, using a food processor or hand grater.
    Place in a medium bowl.
    Add yogurt, mint and white pepper and stir to combine.
    Cover the yogurt mixture and refrigerate it until needed.
    To serve, arrange each sliced tomato on individual plates; top with the cucumber mixture. Serves 6.
