Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    2 c. all-purpose flour
    1/4 tsp. baking powder
    2 tsp. baking soda
    1 tsp. salt
    1 Tbsp. cinnamon
    2 c. zucchini, grated (do not peel)
    1 c. chopped pecans
    2 tsp. vanilla extract
Preparation
    Mix eggs, sugar and oil.
    Sift together flour, salt, baking powder, soda and cinnamon.
    Add zucchini (squeeze out any excess juice) and pecans.
    Add vanilla.
    Pour batter into 2 greased loaf pans.
    Bake at 350\u00b0 for 50 to 60 minutes.
