Ingredients

1/2 c. butter or margarine
1/2 c. creamy or chunky peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar, firmly packed
1 large egg
3/4 tsp. vanilla extract
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/4 tsp. salt
Preparation

Heat
oven to 375\u00b0.
In large bowl, with electric mixer on medium
speed beat butter, peanut butter, granulated sugar and half
of the brown sugar until light and fluffy.
Add eggs and vanilla and beat in.
In small bowl, combine flour, baking soda and
salt.
With
mixer
at
low
speed beat into butter mixture until blended.
Sprinkle remaining brown sugar on top of
dough and
fold
in
lightly
so sugar granules are still visible.
Roll into
balls
and
press out with fork to about 1/4-inch thick. Bake 5 to 8 minutes.
Makes about 3 1/2 dozen cookies, 73 calories a cookie.
