Rhubarb Muffins - cooking recipe

Ingredients
    1 1/4 brown sugar
    1/2 c. oil
    2 eggs
    2 tsp. vanilla
    1 c. buttermilk
    1 1/2 c. diced rhubarb
    2 1/2 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
Preparation
    Mix sugar, oil, eggs, vanilla and buttermilk.
    Sift dry ingredients and mix with egg mixture.
    Fold in rhubarb.
    Place in muffin tins and sprinkle tops with mixture of 1/3 cup sugar and 1 teaspoon cinnamon.
    Bake at 400\u00b0 for 20 to 25 minutes.
    Makes 18 muffins.
