Baked Chicken Stir-Fry - cooking recipe

Ingredients
    3 lb. chicken pieces
    1 pkg. carrots, sliced
    1 small onion, chopped
    1 pkg. celery, sliced
    1/4 clove garlic, minced
    garlic or regular oil
    salt to taste
Preparation
    Brown outside of chicken in garlic oil (do not cook).
    Set aside in casserole dish.
    In same frying pan as chicken and oil, stir-fry onion, carrots, celery and garlic until onion are clear in color.
    Pour over chicken and bake at 350\u00b0 for 1 hour or until chicken is tender and vegetables are a little crunchy.
    Serve over rice.
