Louisiana Yam Corn Bread - cooking recipe

Ingredients
    2 c. flour
    2 c. yellow corn meal
    2 1/2 Tbsp. baking powder
    2 tsp. salt
    2 2/3 c. mashed cooked or canned yams
    4 eggs
    3/4 c. milk
    1/3 c. oil
    1/2 c. sugar
Preparation
    Sift the flour with the corn meal, baking powder, salt and sugar and set aside.
    Combine the eggs, milk and oil in a large bowl; beat until smooth.
    Add the yams; beat until blended.
    Add flour mixture; stir only until the flour mixture is moist.
    Spoon into 2 greased 8-inch square pans.
    Bake at 425\u00b0 for 35 to 40 minutes.
