Ingredients

1/3 c. sugar
1/4 c. cornstarch
3 Tbsp. European style cocoa or unsweetened cocoa
2 c. cold skim milk
1 tsp. vanilla extract
8-inch (6 oz.) packaged graham cracker crust
frozen nondairy whipped topping, thawed (optional)
fresh fruit (optional)
Preparation

In large microwave-safe bowl, stir together sugar, cornstarch and cocoa; gradually stir in milk.
Microwave at High 2 minutes; stir well.
Microwave at High 2 to 5 minutes or until mixture just begins to boil; stir well.
Microwave at High 30 seconds to 1 minute until mixture is very hot and thickened.
Pour into crust. Place plastic directly onto surface; refrigerate several hours or until firm.
Garnish with whipped topping and fresh fruit, if desired.
