Chicken And Rice Casserole - cooking recipe

Ingredients
    1 c. long grain or wild rice
    1/3 c. butter
    1/3 c. onions
    1/8 c. flour
    1 1/4 c. chicken broth
    1 1/4 c. half and half or milk
    2 c. cooked chicken, diced
    1/3 c. pimento, chopped
    1 Tbsp. parsley
    1/2 tsp. salt
    1/4 tsp. pepper
    1/3 c. slivered almonds, toasted (optional)
Preparation
    Cook rice as directed.
    Saute onions in butter.
    Remove skillet from heat and stir in flour.
    Gradually stir in broth until well blended.
    Add half and half.
    Cook and stir until slightly thickened.
    Mix in cooked rice, chicken, pimento and seasonings.
    Blend and put in large baking pan.
    Sprinkle toasted almonds over top.
    Bake in 350\u00b0 oven for 30 minutes.
