Mary'S Breakfast Burritos - cooking recipe
Ingredients

1/2 lb. bulk pork sausage
1 Tbsp. vegetable oil
1 small potato, peeled and diced
4 to 5 eggs, slightly beaten
8 (6-inch) flour tortillas
picante sauce
2 slices American cheese (optional)
Preparation

Brown sausage until it crumbles.
Drain on paper towels.
Heat oil in skillet.
Add potatoes and cook until tender, stirring often.
Return sausage to skillet.
Pour eggs over potatoes and sausage.
Use a spatula to draw it across bottom of skillet until egg forms large curds.
Cheese may be added at this time.
