South-Of-The-Border Soup - cooking recipe

Ingredients
    3 Tbsp. butter, divided
    1 lb. ground beef
    1/2 lb. chorizo or kielbasa sausage, sliced
    1 c. chopped onions
    1 c. dried carrots
    3 garlic cloves, minced
    2 cans (13 3/4 or 14 1/2 oz. each) beef broth
    1/2 tsp. salt
    1 can (16 oz.) whole tomatoes, undrained and coarsely chopped
    3 c. water
    2 cans (16 oz.) each golden hominy or whole kernel corn, drained
    1/3 c. chopped fresh cilantro or 1/4 c. parsley and 1/2 tsp. ground cilantro
    1/2 tsp. ground cumin
    2 jalapeno peppers or green chilies, seeded and chopped
Preparation
    In a heavy skillet, melt 1 tablespoon of butter.
    Add ground beef and cook, stirring to break into small pieces.
    Drain well. Set aside.
