Stir-Fry Chicken And Melons - cooking recipe

Ingredients
    1 Tbsp. cream sherry
    1 Tbsp. oil (canola)
    1 tsp. cornstarch
    a bit of ginger
    1 tsp. lemon juice (more if you like real lemony)
    1 tsp. honey
    1 1/2 to 2 lb. chicken tenders
    1 to 1 1/2 c. each honeydew and cantaloupe, cut up
Preparation
    Lightly brown chicken in oil, stirring for 5 to 7 minutes. Remove from pan.
    Add sherry, cornstarch, honey, lemon juice and ginger. Stir until smooth. Add melon.
    Keep stirring lightly for a few minutes. Add chicken. Cover for a couple of minutes. Serve over pasta or Chinese noodles.
