Shrimp Bisque - cooking recipe

Ingredients
    1 1/2 lb. peeled and deveined, cooked shrimp, chopped fine
    3 c. milk (room temperature)
    3 Tbsp. sherry
    dash of nutmeg
    6 Tbsp. butter
    2 Tbsp. grated onion
    1 c. light cream
    2 Tbsp. parsley or chives
    salt and pepper to taste
Preparation
    In double boiler, melt butter and onion.
    Gradually add milk and shrimp.
    Cook for 2 minutes.
    Slowly stir in light cream. Heat, but do not boil.
    Add sherry, parsley or chives, nutmeg, salt and pepper.
    Blend well.
