Banana Bread - cooking recipe

Ingredients
    1/3 c. shortening
    2/3 c. sugar
    1/4 tsp. grated lemon rind or 1/8 tsp. lemon extract
    1 egg
    1 3/4 c. flour
    1 1/2 tsp. baking powder
    1/4 tsp. baking soda
    2 to 3 mashed ripe bananas (black skin is good)
    1/2 c. chopped walnuts or pecans (if desired)
Preparation
    Preheat oven to 350\u00b0 (325\u00b0 for glass). Grease and flour loaf pan.
    Beat shortening, sugar and lemon rind or extract until creamy. Beat in egg. Add dry ingredients. Stir in mashed ripe bananas until smooth.
    Pour into prepared pan.
    Bake at 350\u00b0 (325\u00b0 for glass pan) for 1 hour.
