Morning Glory Muffins - cooking recipe
Ingredients

1 1/4 c. sugar
2 1/4 c. plain flour
1 Tbsp. cinnamon
2 tsp. soda
1/2 tsp. salt
1/2 c. coconut
1 c. vegetable oil
1/2 c. raisins
2 carrots, grated
1 apple, shredded
8 oz. pineapple, drained
1/2 c. nuts, chopped
3 eggs
1 tsp. vanilla
Preparation

Blend together dry ingredients well.
Whisk together eggs, oil and vanilla.
Add to dry ingredients; mix well.
Add fruit, carrots and nuts.
Spoon batter into cupcake tins, lined with paper cups.
Fill to brim.
Bake at 350\u00b0 until done.
Cool for 10 minutes.
Allow 24 hours before serving.
Delicious with cream cheese and honey.
