Beef With Cashews(Chinese) - cooking recipe

Ingredients
    1 lb. beef rump steak, trimmed
    4 Tbsp. vegetable oil, divided
    1/2 c. water
    4 tsp. cornstarch
    4 tsp. soy sauce
    1 tsp. sesame oil
    1 tsp. oyster sauce
    1 tsp. Chinese chili sauce
    8 green onions, cut into 1 inch pieces
    2 cloves garlic, crushed
    1 piece fresh ginger (1 inch square), pared and finely chopped
    2/3 c. unsalted, roasted cashews
Preparation
    Cut beef across grain into thin slices about 2 inches long. Heat 2 tablespoons vegetable oil in large skillet over high heat. Stir-fry 1/2 of the beef until brown; 3 to 5 minutes.
    Remove and set aside.
    Repeat with remaining beef.
    Combine water, cornstarch, soy sauce, sesame oil, oyster sauce and chili sauce in small bowl; mix well.
    Heat remaining 2 tablespoons vegetable oil in pan over high heat.
    Add onions, garlic, ginger and cashews.
    Stir-fry 1 minute.
    Add meat and cornstarch mixture.
    Cook and stir until liquid boils and thickens.
