Zucchini And Eggplant - cooking recipe

Ingredients
    2 Tbsp. oil
    1 clove minced garlic
    2 small zucchini, sliced
    2 medium onions, sliced
    2 medium tomatoes, sliced
    2 medium green peppers, ringed
    1 small eggplant, sliced
Preparation
    Saute garlic in oil.
    Add vegetables in layers as order given, sprinkling each layer with 1/4 teaspoon salt and pepper.
    Drizzle 1/2 tablespoon oil on top.
    Cover.
    Cook over low heat and stir occasionally.
    Cook 35 to 45 minutes.
