Ingredients

1 envelope unflavored gelatin
1 c. skim milk
1/2 c. sugar
dash of salt
2 1/2 c. vanilla low-fat yogurt
2 tsp. vanilla extract
3 c. frozen, sliced peaches, pureed
Preparation

Sprinkle gelatin over milk in a saucepan; let stand 1 minute. Cook over low heat, stirring constantly, until gelatin dissolves. Remove from heat and add sugar and salt, stirring until sugar dissolves.
Stir in yogurt, vanilla and pureed peaches.
Cover and chill.
Pour yogurt mixture into freezer can of a 4-quart hand-turned or electric freezer.
Freeze according to manufacturer's instructions.
Scoop yogurt into individual dishes. Serve immediately.
Yields 7 1/2 cups (about 82 calories per 1/2-cup serving).
