Fresh Beet Pickles - cooking recipe

Ingredients
    1 gallon beets
    1 quart vinegar
    1 quart water
    3 c. sugar (or 12 teaspoons of sweet and low)
    3 tsp. mixed pickling spices
    1 tsp. salt
Preparation
    Mix vinegar, water, sugar, spices, and salt. Simmer 10 minutes. Add beets. Simmer 15 - 20 minutesor until beets are tender - don't over cook. Put in desired containers and seal.
