"Last-Of-The-Turkey" Soup - cooking recipe

Ingredients
    2 c. cooked turkey meat, cubed
    turkey carcass
    1 c. chopped celery
    1 sliced carrot
    1 chopped onion
    1 bay leaf
    2 tsp. parsley flakes
    1/4 tsp. thyme leaves
    1/4 tsp. sweet basil leaves
    salt to taste
Preparation
    Remove meat from carcass of turkey and set aside in refrigerator.
    Crack bones of turkey carcass and place in kettle. Cover with water.
    Add skin and seasonings.
    Simmer 2 hours. Chill.
    Skim off fat and remove bones, skin and bay leaf.
    Add the turkey meat, celery, carrot and onion.
    Simmer until vegetables are desired consistency.
    Add salt to taste.
