Fatoosh - cooking recipe

Ingredients
    1 cucumber, peeled and diced
    2 fresh tomatoes, cubed
    4 fresh mint leaves, finely chopped
    1 medium onion, chopped
    1/4 c. olive oil
    1/2 tsp. salt
    1/4 c. lemon
Preparation
    Blend and serve with pita wedges or blue chips.
