Stilton Soup - cooking recipe

Ingredients
    2 oz. unsalted butter
    1 onion, finely chopped
    2 celery sticks, chopped
    4 Tbsp. flour
    3 Tbsp. dry white wine
    3 c. chicken stock
    1 c. milk
    4 oz. Blue Stilton cheese, crumbled
    2 oz. grated English Cheddar
    salt and pepper to taste
    4 Tbsp. heavy cream
    croutons to garnish
Preparation
    Melt butter in saucepan, add onion and celery and fry gently for 5 minutes.
    Stir in flour and cook for 1 minute.
    Remove from heat, stir in wine and stock, return to heat, bring to boil and simmer 30 minutes.
    Add milk and cheeses, stirring constantly; season to taste.
    Puree in blender and reheat without boiling. Stir in cream and serve with or without croutons.
