Zucchini And Tomato Bake - cooking recipe

Ingredients
    1 Tbsp. light butter or margarine
    1 large yellow onion, sliced
    4 zucchini, sliced
    2 (14 1/2 oz. each) cans Italian-flavored tomatoes
    1 (4 oz.) reduced-fat Mozzarella cheese
Preparation
    Coat a skillet with nonstick cooking spray.
    Melt butter and saute onions until transparent.
    Add zucchini and tomatoes; simmer 15 minutes, covered.
    Sprinkle cheese over vegetables.
    Cover and simmer until the cheese melts.
    Serves 4. Contains 148 calories and 8 grams fat.
