Hot Chicken Salad - cooking recipe

Ingredients
    2 c. diced cooked chicken
    1 1/2 c. diced celery
    1/2 c. toasted pecans
    2 hard-boiled eggs, chopped
    1 Tbsp. chopped onion
    1 c. mayonnaise
    1 1/2 tsp. grated lemon rind
    2 tsp. lemon juice
    1/2 tsp. pepper
    1 1/2 c. (6 oz.) shredded potato chips
    1 1/2 c. grated Cheddar cheese
Preparation
    Combine first 9 ingredients in a large bowl, mix well.
    Spoon chicken mixture into a lightly greased shallow 2-quart casserole (or use 9 x 13 x 2-inch pan).
    Sprinkle cheese over mixture.
    Top with potato chips.
    Bake at 375\u00b0 for 25 minutes.
    Serves 6 to 8.
