Sugarless Applesauce Cake - cooking recipe

Ingredients
    1 c. raisins
    1 c. diced dried fruit
    2 c. water
    2 c. all-purpose flour
    1 tsp. baking soda
    1/2 tsp. ground nutmeg
    2 eggs, beaten or egg substitute equivalent
    1 c. unsweetened applesauce
    2 Tbsp. liquid sweetener
    3/4 c. vegetable oil
    1 tsp. vanilla extract
    1/2 c. nuts
Preparation
    Combine raisins, fruit and water in a saucepan; cook, uncovered, until water in saucepan has evaporated and fruit is soft.
    Set aside to cool.
    Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon.
    In another bowl combine eggs, applesauce, sweetener, oil and vanilla.
    Add nuts and reserved fruit mixture.
    Stir in dry ingredients and blend thoroughly.
    Pour into a greased 10-inch fluted pan.
    Bake at 350\u00b0 for 35 to 40 minutes or until cake is done.
