Caramel Popcorn Brittle - cooking recipe

Ingredients
    3 c. sugar
    1 c. water
    1/2 tsp. vanilla
    8 c. popped corn without salt or oil
    1 c. mini marshmallows
    3/4 c. salted dry roasted peanuts
Preparation
    In a large Dutch oven, combine sugar and water.
    Cook over medium-low heat, without stirring, for 10 minutes or until sugar dissolves.
    Cover, increase heat to medium and cook 1 minute. Cook, uncovered and without stirring, 12 minutes longer or until amber.
    Remove from heat.
    Stir in vanilla.
    Add popped corn, marshmallows and peanuts.
    Working rapidly, stir well and spread into a 15 x 10-inch jellyroll pan, coated with nonstick spray. Let cool.
    Break into pieces.
    Store in an airtight container. Yields 1 3/4 pounds.
