Super Carrot Cake - cooking recipe
Ingredients

3 c. packed, shredded carrots
1 Tbsp. lemon juice
1 (20 oz.) can crushed pineapple, well drained
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. crushed cloves
1/2 tsp. nutmeg
1/2 tsp. allspice
1 c. chopped nuts (walnuts)
1 c. chopped dates
3 c. flour
2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
1 1/2 c. oil
5 eggs
2 tsp. vanilla
1 c. flaked coconut
Preparation

Combine carrots and lemon juice.
Combine flour, sugar, baking powder, baking soda, spices and salt in a bowl.
Beat in eggs, one at a time and stir in vanilla, coconut, walnuts, dates and pineapple until well blended.
Pour into greased pans (2 loaf pans).
Bake at 350\u00b0 until toothpick comes out clean and cakes shrink away from sides of pan (approximately 60 minutes).
