Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and cubed
    1 medium onion, grated
    1 small jar chopped pimento
    1 tsp. poultry seasoning
    4 slices bread, crumbled
    2 Tbsp. butter, melted
    1/2 c. evaporated milk
    1 egg, beaten
    grated cheese
Preparation
    Boil eggplant until tender.
    Soak bread in milk.
    Add eggplant and other ingredients to the bread mixture.
    Place in a 1 1/2-quart casserole dish.
    Top with grated cheese.
    Bake at 350\u00b0 for 20 to 30 minutes, until fluffy and brown.
