Penne Pasta Casserole - cooking recipe
Ingredients

1/2 bunch fresh broccoli, chopped
1/2 sweet red pepper, cut in strips
1 c. julienned carrots
2 zucchini, thinly sliced garlic
olive oil
pesto sauce
1 lb. Ricotta cheese
1 lb. shredded Mozzarella cheese
1 pkg. penne pasta
Preparation

Cook pasta; rinse and set aside.
Saute vegetables in lots of garlic and a little olive oil.
When just tender, add pesto and mix well.
Then mix vegetables, pasta and Ricotta together.
Pour into a 9 x 13-inch baking dish.
Top with Mozzarella.
Cover and bake at 350\u00b0 for about 45 minutes or until hot throughout and cheese is melted.
