Caramel Icing - cooking recipe

Ingredients
    2 c. sugar
    1 c. whipping cream
    1/4 c. sugar
    1 tsp. vanilla
    1/3 stick margarine
Preparation
    Bring to a boil in a heavy, large pan 2 cups sugar and whipping cream.
    In a small pan or skillet, caramelize 1/4 cup sugar.
    Stir to keep from burning.
    When caramelized, add to the cream and sugar mixture.
    Cook until soft ball forms in cold water.
    This only takes a few minutes.
    Take off heat; add vanilla and margarine.
    Beat with mixer until thick.
    If too thick, add a little milk.
