Stuffed Baked Potatoes - cooking recipe
Ingredients

6 slices bacon
6 large baking potatoes
2 scallions
1/4 c. parsley
8 oz. sour cream
3 oz. mayonnaise
2 oz. butter
1/4 tsp. salt and pepper
3 Tbsp. Parmesan cheese
1/2 c. Cheddar cheese
Preparation

Cook bacon and set aside for garnish.
Bake potatoes until tender.
Remove from oven and cool.
Chop scallions.
When potatoes have cooled, hollow out potato from the top.
Put pulp, scallions, parsley, sour cream, mayonnaise, butter, salt, pepper and Parmesan cheese in a bowl and mix until creamy.
Spoon into potato skins and add cheese and bacon.
Bake in oven at 325\u00b0 for 20 minutes.
